Craig Cook, owner, master butcher and primary farmer runs his Tova farm, in the Southern Highlands supplying his store premium beef cuts for dry-ageing. Growing up in Wollongong, he worked after school milking cows at the local dairy farm and at the meatworks preparing provisions for the ships at Port Kembla. At 16 he commenced an apprenticeship at the David Jones butchering in Wollongong and at 20 he opened his own butcher stores, first at Dapto and then in central Wollongong.
In the late 1980s Craig was invited by David Jones to run the butchery at their new food hall in their flagship Sydney store, which he continues to this day. After opening more of his own stores in Sydney, to ensure a consistent supply, in 2004 he purchased his own farm, Tova, in the Southern Highlands of NSW.
